  Since she was having lunch here, we needed to choose something she could eat. We usually eat dishes with chili peppers, so I asked her what she wanted. After thinking for a while, she said corn, stir-fried with some minced meat.

  So I played the gracious host and bought two ears of corn. I was going to stir-fry it for her. Actually, I really like stir-fried corn myself; it's crispy and sweet with a nice chewy texture. Adding seasonings after stir-frying makes it much tastier than simply steaming it.

  Corn, as a coarse grain, is very nutritious and contains high levels of riboflavin and other nutrients that are beneficial to the body. Therefore, it's quite good for children to eat corn.

  Although stir-fried corn is a relatively light dish, it tastes great and is not complicated to make. Besides shelling the corn kernels, it can be done in a few minutes. It's a simple stir-fry, but my niece ate it with gusto. We added half a bowl of corn kernels to our half bowl of rice, mixing them together. The sweet and fragrant kernels were distinct, and I bet even picky eaters would love it.

  Lately, many parents have run out of patience with their children because the kids are home from school. It feels like you're constantly trying to come up with new meals for them.
